The Vedic Science of A2 Bilona Ghee: Why Processing Matters
Most commercial ghee sold today is manufactured by boiling raw cream separated directly from hybrid cow milk using high-speed industrial centrifuges. This process strips away the delicate gut-friendly bacteria and enzymatic vitality found in traditionally prepared ghee.
In the sacred 5-step Bilona method practiced at Om Enterprises, whole grass-fed Desi cow milk is first boiled and inoculated into probiotic curd. Once set overnight, the curd is churned bi-directionally using a wooden churner (Bilona) to separate fresh makkhan (butter). This makkhan is then gently clarified over a low flame fueled by cow dung cakes.
